Black garlic is produced by fermenting or storing fresh white garlic (Allium sativum) under controlled temperature and humidity conditions. During this process/maturation, not only the colour but also the composition of the garlic changes. The intense smell is largely reduced, while the content of S-allylcysteine (SAC) increases – a compound that is only present in small amounts in fresh garlic.
